They are packed with ground beef, black beans made really cheesy and delicious with a sprinkling of Monterey Jack and cheddar cheese.\u00a0Treat yourself to a couple of these guys with a side of<\/p>\n<p>&nbsp;<\/p>\n<p>Jarritos Margaritas.\u00a0\ud83d\ude0e<\/p>\n<p>Like your enchiladas with a kick?\u00a0Finely mince 2 jalape\u00f1os and saut\u00e9\u00a0them with the onions for a little added heat, or add 1\/4 to 1\/2 teaspoon cayenne to the ground beef mixture.\u00a0And, if you&#8217;ve got the extra time, give the dish an upgrade with Makinze&#8217;s homemade enchilada sauce.<\/p>\n<p>If you have leftovers you can store them in an airtight container in the fridge for up to 4 days but these actually freeze pretty well too! Looking for a meatless version?\u00a0Try our Vegetarian Enchiladas!<\/p>\n<div>\n<div>\n<h2>Ingredients<\/h2>\n<\/div>\n<div>\n<div>\n<h3>For enchiladas<\/h3>\n<ul>\n<li><strong>1<\/strong> <strong>tbsp.<\/strong>extra-virgin olive oil<\/li>\n<li><strong>1\/2<\/strong>medium onion, chopped<\/li>\n<li><strong>2<\/strong>cloves garlic, minced<\/li>\n<li><strong>1<\/strong> <strong>lb.<\/strong>ground beef<\/li>\n<li><strong>1<\/strong> <strong>tsp.<\/strong>chili powder<\/li>\n<li><strong>1<\/strong> <strong>tsp.<\/strong>ground cumin<\/li>\n<li>Kosher salt<\/li>\n<li>Freshly ground black pepper<\/li>\n<li><strong>1<\/strong>(19-oz.) can enchilada sauce<\/li>\n<li><strong>1<\/strong>(15-oz.) can corn, drained<\/li>\n<li><strong>1<\/strong>(15-oz.) can black beans, drained and rinsed<\/li>\n<li><strong>8<\/strong>flour tortillas<\/li>\n<li><strong>2\/3<\/strong> <strong>c.<\/strong>shredded Monterey jack<\/li>\n<li><strong>1\/3<\/strong> <strong>c.<\/strong>shredded cheddar<\/li>\n<\/ul>\n<\/div>\n<div>\n<h3>For topping<\/h3>\n<ul>\n<li>Quartered grape tomatoes<\/li>\n<li>Diced avocado<\/li>\n<li>Finely chopped onion<\/li>\n<li>Fresh cilantro leaves<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div>\n<div>\n<h2>Directions<\/h2>\n<\/div>\n<ul>\n<li>\n<ol>\n<li><span>Step\u00a0<\/span><span>1<\/span>\n<p>Preheat oven to 350\u00b0. In a large skillet over medium heat, heat oil. Add onion\u00a0and cook until soft, 5 minutes. Stir in garlic and cook until fragrant, 1 minute more. Add ground beef and cook until no longer pink, about 6 minutes. Drain fat.<\/li>\n<li><span>Step\u00a0<\/span><span>2<\/span>Return beef mixture to skillet over medium heat.\u00a0Add chili powder and cumin and season with salt and pepper, then stir in enchilada sauce. Bring to a simmer and cook until sauce thickens slightly, about 3 minutes.\u00a0Remove from heat and stir in corn and black beans.<\/li>\n<li><span>Step\u00a0<\/span><span>3<\/span> Add a large scoop of meat mixture onto each tortilla and roll up.
