Hot, cheesy, and so damn good.<\/em><\/p>\n<h2>But What is Pastitsio?<\/h2>\n<p>Pastitsio is one of those ultimate indulgence sort of meals that need their own food group, like lasagna and all forms of mac and cheese. Any time dinner consists 97% pasta and 3% the stuff slathered all over it, it probably has some political official spending some ungodly amount of dollars building a campaign saying it slaughters innocent giraffes. \u00a0(I know it most definitely upsets Mister Oliver, and really, he\u2019s kind of awesome, so don\u2019t eat this every day, mkay?). You could add a nice spinach salad to the side, you know, round things out. Pure guilt, pure indulgence, and 100% rocking because you flexed those culinary skills and made it all from scratch.<\/div>\n<div><\/div>\n<div><span>Cook Mode<\/span><span>Prevent your screen from going to sleep<\/span><\/p>\n<\/div>\n<div>\n<h3>Ingredients<\/h3>\n<div>\n<p><span><span>\u25a2 <\/span><\/span><span>3<\/span> <span>tbsp<\/span> <span>olive oil<\/span> <span>good quality<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>large yellow onion<\/span> <span>diced<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>lbs<\/span> <span>lean ground beef<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>lbs<\/span> <span>lean ground lamb<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1\/2<\/span> <span>cup<\/span> <span>dry red wine<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>tbsp<\/span> <span>minced garlic<\/span> <span>3 large cloves<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>tbsp<\/span> <span>ground cinnamon<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>tsp<\/span> <span>dried oregano<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>tsp<\/span> <span>fresh thyme leaves<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>Pinch<\/span> <span>of cayenne pepper<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>28<\/span> <span>oz<\/span> <span>crushed tomatoes<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>Salt and pepper<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1 1\/2<\/span> <span>cups<\/span> <span>whole milk<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1<\/span> <span>cup<\/span> <span>heavy cream<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>4<\/span> <span>tbsp<\/span> <span>unsalted butter<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1\/4<\/span> <span>cup<\/span> <span>flour<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1\/4<\/span> <span>tsp<\/span> <span>freshly grated nutmeg<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>1 1\/2<\/span> <span>cups<\/span> <span>freshly grated Parmesan<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>2<\/span> <span>large eggs<\/span> <span>beaten<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>2\/3<\/span> <span>cup<\/span> <span>plain Greek yogurt<\/span><\/p>\n<p><span><span>\u25a2 <\/span><\/span><span>3\/4<\/span> <span>lbs<\/span> <span>pasta shells<\/span> <span>small<\/span><\/p>\n<\/div>\n<\/div>\n<div>\n<h3>Instructions<\/h3>\n<div>\n<h4>Start with the meat sauce:<\/h4>\n<ul>\n<li>\n<div>Heat the olive oil in a large pot over medium-high heat. Saute the onion for 5 minutes, until soft.<\/div>\n<\/li>\n<li>\n<div>Add the ground beef and lamb and cook for 8 to 10 minutes, breaking up with a spoon.<\/div>\n<\/li>\n<li>\n<div>Drain off any fat if needed.<\/div>\n<\/li>\n<li>\n<div>Add the wine and cook for 2 minutes.<\/div>\n<\/li>\n<li>\n<div>Add the garlic, cinnamon, oregano, thyme, and cayenne pepper. Stir to combine and cook for 5 minutes longer.<\/div>\n<\/li>\n<li>\n<div>Add the tomatoes and season with 2 teas salt and 1 teas pepper, if desired. Simmer for 40 &#8211; 45 minutes.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div>\n<h4>Meanwhile, make the b\u00e9chamel sauce.<\/h4>\n<ul>\n<li>\n<div>Heat the milk and cream in a small saucepan over medium-low heat until just starting to simmer, there will be bubbles around the edges and steam coming off the top.<\/div>\n<\/li>\n<li>\n<div>In another larger saucepan, melt the butter over medium-low heat. Add the flour, stir, and cook for 2 minutes. Whisk away.<\/div>\n<\/li>\n<li>\n<div>Slowly pour in the heated milk and whisk vigorously. Cook for 5 to 7 minutes longer, stirring often, until thick.<\/div>\n<\/li>\n<li>\n<div>Add the nutmeg, 1 teaspoon of salt and pepper if desired. Add 3\/4 cup of the shredded Parmesan cheese and 1\/2 cup of the tomato meat sauce.<\/div>\n<\/li>\n<li>\n<div>Allow to cool for 10 minutes. Lastly, stir in the eggs and yogurt.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div>\n<h4>Pastitsio<\/h4>\n<ul>\n<li>\n<div><span>Preheat the oven to 350 degrees F. Grease a 9 x 13&#8243; baking dish.\u00a0<\/span><\/div>\n<\/li>\n<li>\n<div>Cook the pasta in a large pot of salted water until just al dente. You&#8217;re going to continue to bake it, so don&#8217;t over cook it. Drain.<\/div>\n<\/li>\n<li>\n<div>Toss the pasta in with the meat sauce to combine. Pour into the prepared baking dish and spread evenly.<\/div>\n<\/li>\n<li>\n<div>Pour the bachamel sauce over the top and shake the pan about to spread evenly. Top with the remaining 3\/4 cup Parmesan cheese.<\/div>\n<\/li>\n<li>\n<div>Bake, uncovered, for 1 hour, until golden brown and bubbly.
