{"id":7233,"date":"2024-04-26T13:54:24","date_gmt":"2024-04-26T13:54:24","guid":{"rendered":"https:\/\/homekitchennotes.com\/foodiecrush\/2024\/04\/26\/lemony-latkes\/"},"modified":"2024-07-30T08:29:40","modified_gmt":"2024-07-30T08:29:40","slug":"lemony-latkes","status":"publish","type":"post","link":"https:\/\/homekitchennotes.com\/ja\/lemony-latkes\/","title":{"rendered":"Lemony Latkes"},"content":{"rendered":"<p>This cheesy, lemony twist on traditional latkes was created by Missy Robbins, chef\/owner of Lilia in Brooklyn.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>Makes about 12<\/p>\n<div>\n<p>6<\/p>\n<div>Yukon Gold potatoes (about 2\u00bd pounds), peeled<\/div>\n<p>1<\/p>\n<div>large onion<\/div>\n<p>2<\/p>\n<div>large egg yolks<\/div>\n<p>3<\/p>\n<div>garlic cloves, grated<\/div>\n<p>2<\/p>\n<div>.5 ounces finely grated Parmesan (about 1\u00be cups)<\/div>\n<p>1<\/p>\n<div>tablespoon finely grated lemon zest<\/div>\n<div>Kosher salt<\/div>\n<p>2<\/p>\n<div>tablespoons rice flour<\/div>\n<p>\u00be<\/p>\n<div>cup plus 2 tablespoons canola oil<\/div>\n<p>1<\/p>\n<div>cup ricotta (preferably Calabro)<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Grate potatoes and onion on the large holes of a box grater into a large bowl. Squeeze out excess liquid from potatoes and onions with a dish towel into a medium bowl; reserve liquid. Add egg yolks, garlic, Parmesan, and lemon zest to potatoes and onion and mix well; season with salt. Gently fold in flour, adding reserved liquid if needed, until mixture is loose but still holds together.<\/p>\n<h4>Step 2<\/h4>\n<p>Heat \u00bc cup oil in a medium nonstick skillet over medium. Squeeze about \u2153 cup potato mixture into a rough ball with your hands to get rid of excess liquid. Press ball down to make a 3\u00bd&#8221;-diameter flat round. Working in batches, cook latkes, turning occasionally and adding 1\u20132 Tbsp. oil between batches, until both sides are golden and crunchy, about 4 minutes per side. Transfer to paper towels to drain.<\/p>\n<h4>Step 3<\/h4>\n<p>Process ricotta in a food processor until super smooth and silky.
