One family, regardless of circumstances, sitting under one roof eating dumplings, is happiness from within.\u201d Read more about Chinese New Year and find the full menu here.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>Makes 30<\/p>\n<div>\n<h3>Dipping Sauce<\/h3>\n<p>\u00bc<\/p>\n<div>cup black vinegar<\/div>\n<p>2<\/p>\n<div>Tbsp. low-sodium soy sauce<\/div>\n<p>1<\/p>\n<div>1&#8243; piece ginger, peeled, cut into matchsticks<\/div>\n<p>1<\/p>\n<div>red chile, seeds removed, finely chopped, or 1 tsp. chili oil<\/div>\n<h3>Dumplings<\/h3>\n<p>\u00bd<\/p>\n<div>lb. large shell-on shrimp, peeled, deveined, coarsely chopped<\/div>\n<p>\u00bc<\/p>\n<div>cup thinly sliced scallion greens (from about 4 scallions)<\/div>\n<p>1<\/p>\n<div>2&#8243; piece ginger, peeled, finely grated<\/div>\n<p>2<\/p>\n<div>Tbsp. low-sodium soy sauce<\/div>\n<p>1<\/p>\n<div>tsp. potato starch<\/div>\n<p>1<\/p>\n<div>tsp. sugar<\/div>\n<p>1<\/p>\n<div>tsp. toasted sesame oil<\/div>\n<p>\u00bd<\/p>\n<div>tsp. kosher salt<\/div>\n<div>Pinch of ground white pepper<\/div>\n<p>30<\/p>\n<div>round dumpling wrappers<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h3>Dipping Sauce<\/h3>\n<h4>Step 1<\/h4>\n<p>Mix vinegar, soy sauce, ginger, and chile in a small bowl.<\/p>\n<h4>Step 2<\/h4>\n<p><strong>Do Ahead:<\/strong> Sauce can be made 3 days ahead. Cover and chill.<\/li>\n<li>\n<h3>Dumplings<\/h3>\n<h4>Step 3<\/h4>\n<p>Pulse shrimp in a food processor until there aren\u2019t any pieces bigger than \u00bc&#8221;; transfer to a large bowl. Stir in scallions, ginger, soy sauce, potato starch, sugar, sesame oil, salt, and pepper.<\/p>\n<h4>Step 4<\/h4>\n<p>Working with 1 wrapper at a time and keeping remaining wrappers covered with a damp paper towel so they don\u2019t dry out, place 1 heaping tsp. filling in the center. Using your fingers, spread a little water on edge of one-half of wrapper. Fold wrapper over to make a half-moon shape and press edges together. Using your thumb and index finger, make small pleats along sealed edge, pressing pleats tightly to make sure dumpling is sealed.<\/p>\n<h4>Step 5<\/h4>\n<p>Bring a large pot of water to a boil. Working in 4 batches (do not overcrowd pot), cook dumplings until they begin to float, about 4 minutes.<\/p>\n<h4>Step 6<\/h4>\n<p>Transfer dumplings to a platter.
