It makes all the difference in a simple preparation like this.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>4 servings<\/p>\n<div>\n<p>4<\/p>\n<div>large eggs<\/div>\n<div>Juice from 1 lemon<\/div>\n<p>1<\/p>\n<div>lb. tomatoes, cut into bite-size pieces<\/div>\n<p>1<\/p>\n<div>medium shallot, thinly sliced<\/div>\n<div>A pinch of sugar<\/div>\n<div>Kosher salt<\/div>\n<p>\u00bd<\/p>\n<div>cup mayonnaise<\/div>\n<p>1<\/p>\n<div>small garlic clove, finely grated<\/div>\n<p>1\u00bd<\/p>\n<div>tsp. sherry vinegar or red wine vinegar<\/div>\n<p>\u00bd<\/p>\n<div>tsp. hot smoked Spanish paprika<\/div>\n<p>4<\/p>\n<div>Tbsp. extra-virgin olive oil, plus more for drizzling<\/div>\n<p>4<\/p>\n<div>slices sourdough bread<\/div>\n<p>2<\/p>\n<div>6\u20137-oz. jars oil-packed tuna, drained<\/div>\n<div>Flaky sea salt<\/div>\n<div>Freshly ground black pepper<\/div>\n<p>\u00bd<\/p>\n<div>cup torn mixed tender herbs (such as dill, parsley, basil, and\/or tarragon)<\/div>\n<p>\u00bc<\/p>\n<div>cup oil-cured black olives, pitted, flesh torn<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Bring a medium saucepan of water to a boil. Gently lower eggs into pot with a slotted spoon and cook 8 minutes. Transfer to a bowl of ice water and let cool. Peel eggs; set aside.<\/p>\n<h4>Step 2<\/h4>\n<p>Toss lemon juice, tomatoes, shallot, sugar, and a pinch of kosher salt in a medium bowl.<\/p>\n<h4>Step 3<\/h4>\n<p>Whisk mayonnaise, garlic, vinegar, and paprika in a small bowl; season with kosher salt.<\/p>\n<h4>Step 4<\/h4>\n<p>Heat 2 Tbsp. oil in a large skillet over medium until shimmering. Add 2 slices of bread and cook, adjusting heat as needed, until bottoms are deeply browned, about 3 minutes. Transfer to a platter and sprinkle fried side with kosher salt. Repeat with another 2 Tbsp. oil and remaining slices of bread.<\/p>\n<h4>Step 5<\/h4>\n<p>Spread mayonnaise mixture over toasted side of bread. Top with tuna and tomato mixture; spoon some of the juices over. Tear each egg into 3 or 4 pieces and arrange on top; season with sea salt and pepper. Scatter herbs and olives over; drizzle with oil.<\/p>\n<h4>Step 6<\/h4>\n<p><strong>Do Ahead:<\/strong> Paprika mayonnaise can be made 2 days ahead.
