Diamond Crystal or 2 tsp. Morton kosher salt<\/div>\n<p>3<\/p>\n<div>Tbsp. sour cream<\/div>\n<p>2<\/p>\n<div>Tbsp. cream cheese, room temperature<\/div>\n<p>\u00bc<\/p>\n<div>cup finely chopped celery<\/div>\n<p>2<\/p>\n<div>tsp. extra-virgin olive oil<\/div>\n<p>1<\/p>\n<div>tsp. finely grated lemon zest<\/div>\n<p>1<\/p>\n<div>Tbsp. fresh lemon juice<\/div>\n<p>32<\/p>\n<div>butter crackers (such as Town House)<\/div>\n<p>1<\/p>\n<div>Tbsp. Barbecue Seasoning or paprika<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Combine shrimp, 1 Tbsp. Diamond Crystal or 1\u00be tsp. Morton kosher salt, and 1 quart water in a medium pot. Set over medium-low heat (you want water to slowly come to a bare simmer) and cook until shrimp are just cooked through, 10\u201312 minutes total. Drain and transfer shrimp to a plate; let cool.<\/p>\n<h4>Step 2<\/h4>\n<p>Meanwhile, mix together sour cream, cream cheese, and remaining \u00bd tsp. Diamond Crystal or \u00bc tsp. Morton kosher salt in a medium bowl. Mix in celery, oil, lemon zest, and lemon juice.<\/p>\n<h4>Step 3<\/h4>\n<p>Slice chilled shrimp in half lengthwise, then crosswise into \u00bc&#8221;-thick pieces. Fold shrimp into dressing.<\/p>\n<h4>Step 4<\/h4>\n<p>To serve, top each cracker with 1 Tbsp. dressed shrimp; sprinkle with seasoning.<\/p>\n<h4>Step 5<\/h4>\n<p><strong>Do ahead:<\/strong> Shrimp can be poached and dressing made 1 day ahead.
