Growing up, she would eat them straight-up raw or lightly toasted, but this is her go-to preparation now: sweet, salty, and coated with freshly ground spices. Eat them by the fistful or sprinkle them liberally on salads or grilled veggies for deep flavor and crunch.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>Makes about 4 cups<\/p>\n<div>\n<p>1<\/p>\n<div>tsp. fennel seeds<\/div>\n<p>1<\/p>\n<div>tsp. ground coriander<\/div>\n<p>1<\/p>\n<div>tsp. freshly ground black pepper<\/div>\n<p>1<\/p>\n<div>tsp. paprika<\/div>\n<p>5<\/p>\n<div>garlic cloves, finely grated<\/div>\n<p>4<\/p>\n<div>cups raw pecan halves<\/div>\n<p>1<\/p>\n<div>Tbsp. grapeseed oil<\/div>\n<p>1<\/p>\n<div>Tbsp. honey, preferably local<\/div>\n<p>2<\/p>\n<div>tsp. Diamond Crystal or 1 tsp. Morton kosher salt<\/div>\n<h3>Special Equipment<\/h3>\n<div>A spice mill or mortar and pestle<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Preheat oven to 350\u00b0. Grind fennel seeds in a spice mill or with a mortar and pestle. Transfer to a medium bowl and mix in coriander, pepper, and paprika. Add garlic, pecans, oil, honey, and salt to spice mixture and toss to coat.<\/p>\n<h4>Step 2<\/h4>\n<p>Spread out pecan mixture on a parchment-lined baking sheet. Bake, rotating baking sheet and stirring pecans halfway through, until golden brown and toasted all the way through, 13\u201315 minutes. Let cool.<\/p>\n<h4>Step 3<\/h4>\n<p><strong>Do ahead:<\/strong> Nuts can be made 1 week ahead.
