Here, it\u2019s a bright, zippy number featuring Greek yogurt, a little mayonnaise, sambal oelek (hello, saucy red chile heat!), garlic, lime, and a drizzle of toasted sesame oil. Taste and add more sambal oelek and\/or season with more salt if needed. Cover spicy lime mayo and chill until ready to serve.<\/p>\n<h4>Step 2<\/h4>\n<p><strong>SHRIMP AND ASSEMBLY<\/strong><\/p>\n<p>Arrange <strong>1\u00bd lb. large shrimp (16\u201320)<\/strong>, peeled, deveined, patted dry, on a rimmed baking sheet and season with <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong>. Place <strong>\u00bd cup all-purpose flour<\/strong> in a shallow bowl. Lightly beat <strong>2 large eggs<\/strong> in another shallow bowl to blend. Mix <strong>1 cup unsweetened shredded coconut<\/strong>, <strong>\u00bd cup panko<\/strong>, <strong>\u2153 cup white and\/or black sesame seeds<\/strong>, <strong>1 Tbsp. granulated sugar<\/strong>, and remaining <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong> in a third shallow bowl.<\/p>\n<h4>Step 3<\/h4>\n<p>Working with a couple shrimp at a time, dredge in flour, shaking off any excess, then dip into egg, letting excess drip back into bowl, and dredge in coconut mixture, pressing gently on both sides to adhere and evenly coat. Transfer breaded shrimp back to baking sheet as you go. Chill 10 minutes (this will help the breading stick to the shrimp).<\/p>\n<h4>Step 4<\/h4>\n<p>Pour <strong>vegetable oil (about 1\u00bc cups)<\/strong> in a large skillet to come \u00bc&#8221; up sides and heat over medium-high. Working in 2 batches, cook shrimp until crisp and golden, about 2 minutes per side.
