Coffee<\/span><\/li>\n<li><span>1\u00bc<\/span> <span>cups<\/span> <span>Boiling Water<\/span><\/li>\n<li><span>430g<\/span> <span>(1\u00be cups)<\/span> <span>Unsweetened Applesauce<\/span><\/li>\n<li><span>\u2153<\/span> <span>cup<\/span> <span>Unsweetened Vanilla Almond Milk<\/span><\/li>\n<li><span>4<\/span> <span>Large <\/span> <span>(melted)<\/span><\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div>\n<h3>Instructions<\/h3>\n<div>\n<h4>For the Frosting: (**make the frosting first!)<\/h4>\n<ul>\n<li>\n<div>In an electric stand mixer bowl fitted with a whisk attachment, add the cream cheese, yogurt, and vanilla extract.\u00a0 Turn the stand mixer on medium speed and beat until completely smooth.<\/div>\n<\/li>\n<li>\n<div>Turn off the mixer and add the erythritol, cocoa powder, and espresso powder.\u00a0 Beat until completely smooth.<\/div>\n<\/li>\n<li>\n<div>Turn the mixer on low speed and slowly add the melted chocolate.\u00a0 Mix until completely smooth.\u00a0 Scrape down the sides of the bowl and mix one last time.\u00a0 Cover and refrigerate while you make the cake.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div>\n<h4>For the Cake:<\/h4>\n<ul>\n<li>\n<div>In a french press, add the Starbucks\u00ae Holiday Blend Ground Coffee and boiling water.\u00a0 Let brew for ~6-8 minutes, then press.\u00a0 Measure 1 cup of the coffee and set aside to cool.<\/div>\n<\/li>\n<li>\n<div>Preheat the oven to 350 degrees Fahrenheit.\u00a0 Spray 2 8\u201d cake pans with cooking spray and line with 8\u201d circle parchment paper liners.<\/div>\n<\/li>\n<li>\n<div>In an electric stand mixer bowl fitted with a beater attachment, add the applesauce, almond milk, eggs, egg whites, vanilla extract and stevia extract.\u00a0 Mix on low speed. \u00a0Add in the cooled brewed coffee. \u00a0Keep the mixer running while you prepare the dry ingredients.<\/div>\n<\/li>\n<li>\n<div>In a medium-sized bowl, sift together the coconut flour, erythritol, cocoa powder, baking powder, and salt.<\/div>\n<\/li>\n<li>\n<div>Turn off the mixer and dump in the dry ingredients.\u00a0 Increase the mixer speed to medium and mix until all the ingredients are fully incorporated.\u00a0 Scrape down the sides of the bowl and mix one last time.<\/div>\n<\/li>\n<li>\n<div>The batter will be very thick, so scoop it into the pans and spread it out evenly with an offset spatula.\u00a0 Bake for 50 minutes, or until the surface springs back when tapped.\u00a0 Let cool completely in the pan.<\/div>\n<\/li>\n<li>\n<div>Flip one cake layer onto a cake pedestal, peel off the parchment paper cake liner, and scoop on some of the frosting.\u00a0 Flip the other cake layer onto a parchment paper-lined cookie sheet, peel off the parchment paper cake liner, then carefully slide it onto the frosted bottom cake layer (this is a delicate cake, so be careful!).\u00a0 Frost the remainder of the cake.<\/div>\n<\/li>\n<li>\n<div>Refrigerate uncovered for
