Chocolate Cake Mix<\/span><\/li>\n<li><span>1\u00bc<\/span> <span>cups<\/span> <span>Whole Milk<\/span><\/li>\n<li><span>\u00be<\/span> <span>cup<\/span> <span>Grass-Fed Unsalted Butter<\/span> <span>(melted)<\/span><\/li>\n<li><span>4<\/span> <span>Large <\/span> <span>Eggs<\/span> <span>(room temp)<\/span><\/li>\n<li><span>\u00bd<\/span> <span>tsp<\/span> <span>Peppermint Flavor<\/span><\/li>\n<\/ul>\n<h4>Frosting:<\/h4>\n<ul>\n<li><span>24<\/span> <span>oz<\/span> <span>Neufchatel Cream Cheese<\/span> <span>(room temp)<\/span><\/li>\n<li><span>2<\/span> <span>tsp<\/span> <span>Peppermint Flavor<\/span><\/li>\n<li><span>1<\/span> <span>tsp<\/span> <span>Vanilla Paste<\/span><\/li>\n<li><span>1<\/span> <span>tsp<\/span> <span>Liquid Stevia Extract<\/span><\/li>\n<li><span>2<\/span> <span>cups<\/span> <span>Powdered Erythritol<\/span><\/li>\n<li><span>1<\/span> <span>tsp<\/span> <span>Matcha Powder<\/span><\/li>\n<li><span>2<\/span> <span>oz<\/span> <span>70% Cacao Chocolate<\/span> <span>(melted)<\/span><\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<h4>For the Cupcakes:<\/h4>\n<ul>\n<li>\n<div>Preheat your oven to 350 degrees Fahrenheit and line cupcake pans with 30 paper liners.<\/div>\n<\/li>\n<li>\n<div>In a stand mixer bowl fitted with a whisk attachment, add the milk, melted butter, eggs, and peppermint flavor. \u00a0Mix on low speed until completely smooth.<\/div>\n<\/li>\n<li>\n<div>Turn off the mixer and add in the cake mix. \u00a0Return mixer to low speed for 30 seconds, then increase speed to high and beat for 2 minutes. \u00a0Scrape down the sides of the bowl if necessary.<\/div>\n<\/li>\n<li>\n<div>Use an ice cream scoop to portion the batter into the prepared cupcake tins, filling each cup about \u2154 full. \u00a0Bake for 17-21 minutes, or until the surface of the cupcakes spring back when tapped. \u00a0Let the cupcakes cool for 10 minutes in the pans before transferring them to a cooling rack. \u00a0Let cool completely.<\/div>\n<\/li>\n<\/ul>\n<h4>For the Frosting:<\/h4>\n<ul>\n<li>\n<div>In a stand mixer bowl fitted with a whisk attachment (a hand mixer works too), whip together the cream cheese, peppermint flavor, vanilla paste, and stevia extract.<\/div>\n<\/li>\n<li>\n<div>Add the powdered erythritol and matcha powder and whip until the mixture is completely even. \u00a0Scrape down the sides of the bowl if necessary. \u00a0Mixture should be uber fluffy!<\/div>\n<\/li>\n<li>\n<div>Drizzle about half of the melted chocolate over the frosting to create long and thin chocolate strands. \u00a0Place the bowl in the freezer for 10 minutes, or until the chocolate is completely hardened.<\/div>\n<\/li>\n<li>\n<div>Use a spoon to tap on the chocolate and create chocolate &#8220;shards.&#8221; \u00a0Give the frosting a gentle fold to scoop the frosting from the bottom of the bowl to the top. \u00a0Repeat the chocolate drizzling action, cover the bowl, then place the bowl in the fridge to chill for ~3 hours, or until completely chilled through.<\/div>\n<\/li>\n<li>\n<div>Use an ice cream scoop to scoop the frosting over the cupcakes. \u00a0Serve immediately!<\/div>\n<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>Mint lovers, hold onto your pants. \u00a0Mint Chocolate Chip Ice Cream and Chocolate Cupcakes COLLIDE to make these delicious, simple, and easy Mint Chocolate Cupcakes!
