Spray 2 mini loaf pans* with cooking spray.\u00a0 Place pans on a cookie sheet (makes it easier to transfer in\/out of the oven).<\/div>\n<\/li>\n<li>\n<div>In a stand mixer bowl with beater attachment, add the ricotta, eggs, erythritol, coconut oil, lemon juice, lemon zest, vanilla paste, butter flavor, and stevia extract.\u00a0 Mix on medium-low speed until completely smooth.<\/div>\n<\/li>\n<li>\n<div>With the mixer running, prepare the dry ingredients.\u00a0 In a small bowl, whisk together the flour, baking powder, and salt.\u00a0 Turn the mixer off and dump in the dry ingredients.\u00a0 Mix on low speed until mostly combined, then scrape down the sides of the bowl.\u00a0 Mix on low one final time JUST until the batter is smooth.\u00a0 Do not overmix.<\/div>\n<\/li>\n<li>\n<div>Pour batter into the prepared pan and bake for ~43-45 minutes, or until the surface of the cake springs back when tapped.\u00a0 Let cool completely in the pans.\u00a0 Slice and serve!<\/div>\n<\/li>\n<\/ul>\n<div>\n<h3>Recipe Notes<\/h3>\n<div><span>*You can definitely bake this in a regular cake pan if you like!
