As in the original, I opted for spicy red Thai chile to bring heat, but you can easily use jalape\u00f1o or serrano, or skip the chiles entirely for a heat-free version. For this version I use big creamy white beans, some Swiss chard, and sweet potato to add bulk, but feel free to sub any beans, tender leafy greens, or hearty veggies you like.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>4\u20136 servings<\/p>\n<div>\n<p>1<\/p>\n<div>medium onion, coarsely chopped<\/div>\n<p>1<\/p>\n<div>plum tomato, coarsely chopped<\/div>\n<p>3<\/p>\n<div>garlic cloves<\/div>\n<p>1<\/p>\n<div>1&#8243; piece ginger, scrubbed<\/div>\n<p>2<\/p>\n<div>red Thai chiles or 1 Fresno chile<\/div>\n<p>3<\/p>\n<div>Tbsp. extra-virgin olive oil, divided, plus more for serving<\/div>\n<p>2<\/p>\n<div>tsp. Diamond Crystal or 1 tsp. Morton kosher salt, divided, plus more<\/div>\n<p>\u00bd<\/p>\n<div>tsp. ground coriander<\/div>\n<p>\u00bd<\/p>\n<div>tsp. ground cumin<\/div>\n<p>1<\/p>\n<div>13.5-oz. can unsweetened coconut milk<\/div>\n<p>1<\/p>\n<div>medium sweet potato, peeled, sliced into \u00bc&#8221;-thick rounds<\/div>\n<p>1<\/p>\n<div>large bunch Swiss chard or Tuscan kale, ribs and stems removed, leaves coarsely chopped<\/div>\n<p>2<\/p>\n<div>15-oz. cans butter, gigante, or cannellini beans, rinsed<\/div>\n<p>2<\/p>\n<div>Tbsp. (or more) fresh lemon juice<\/div>\n<p>1<\/p>\n<div>baguette, sliced on a diagonal 1&#8243; thick<\/div>\n<div>Flaky sea salt<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Pur\u00e9e <strong>1 medium onion, coarsely chopped<\/strong>, <strong>1 plum tomato, coarsely chopped<\/strong>, <strong>3 garlic cloves<\/strong>, <strong>one 1&#8243; piece ginger, scrubbed<\/strong>, and <strong>2 red Thai chiles or 1 Fresno chile<\/strong> in a blender until smooth.<\/p>\n<h4>Step 2<\/h4>\n<p>Heat <strong>1 Tbsp. extra-virgin olive oil<\/strong> in a large deep skillet over medium. Add onion mixture and <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong>. Cook, stirring occasionally, until moisture is evaporated and mixture is paste-like in consistency and beginning to stick to bottom of skillet, 12\u201316 minutes.<\/p>\n<h4>Step 3<\/h4>\n<p>Stir in <strong>\u00bd tsp. ground coriander<\/strong>, <strong>\u00bd tsp. ground cumin<\/strong>, and <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong>. Pour in <strong>one 13.5-oz. can unsweetened coconut milk<\/strong> and 2 cups water; stir to combine. Increase heat to medium-high and bring to a boil. Add <strong>1 medium sweet potato, peeled, sliced into \u00bc&#8221;-thick rounds<\/strong>, and cook, stirring occasionally, until tender, 10\u201312 minutes.<\/p>\n<h4>Step 4<\/h4>\n<p>Add <strong>1 large bunch Swiss chard or Tuscan kale, ribs and stems removed, leaves coarsely chopped<\/strong>, and <strong>two 15-oz. cans butter, gigante, or cannellini beans, rinsed<\/strong>, and cook, stirring occasionally, until chard is wilted, about 4 minutes. Remove from heat and stir in <strong>2 Tbsp. fresh lemon juice<\/strong>. Taste and add more kosher salt and\/or lemon juice if needed.<\/p>\n<h4>Step 5<\/h4>\n<p>Meanwhile, heat <strong>1 Tbsp. extra-virgin olive oil<\/strong> in a large cast-iron skillet over medium-high. Working in 2 batches and adding <strong>1 Tbsp. extra-virgin olive oil<\/strong> between batches, fry <strong>1 baguette, sliced on a diagonal 1&#8243; thick<\/strong>, until golden, about 2 minutes per side. Set aside.<\/p>\n<h4>Step 6<\/h4>\n<p>Divide stew among bowls. Season with <strong>flaky sea salt<\/strong> and drizzle with more <strong>extra-virgin olive oil<\/strong>.
