Braising them in soy sauce and garlic flavors them from the inside out, while the sugar and agave bring an enticing gloss and mild sweetness. French green lentils (like Le Puy) would also work great.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>4 servings<\/p>\n<div>\n<p>4<\/p>\n<div>garlic cloves, thinly sliced<\/div>\n<p>\u00bd<\/p>\n<div>cup black beluga lentils, rinsed<\/div>\n<p>3<\/p>\n<div>Tbsp. soy sauce<\/div>\n<p>2<\/p>\n<div>Tbsp. agave nectar<\/div>\n<p>1<\/p>\n<div>Tbsp. sugar<\/div>\n<p>1<\/p>\n<div>Tbsp. toasted sesame seeds<\/div>\n<div>Cooked rice and seasoned toasted seaweed snacks (for serving)<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Bring <strong>4 garlic cloves, thinly sliced<\/strong>, <strong>\u00bd cup black beluga lentils, rinsed<\/strong>, <strong>3 Tbsp. soy sauce<\/strong>, and 2 cups water to a simmer in a medium saucepan over medium heat. Cook, stirring occasionally and adjusting heat as needed to maintain a gentle simmer, until lentils are tender (liquid will be mostly absorbed), 18\u201322 minutes.<\/p>\n<h4>Step 2<\/h4>\n<p>Mix in <strong>2 Tbsp. agave nectar<\/strong> and <strong>1 Tbsp. sugar<\/strong> and cook, stirring often, until liquid is syrupy and reduced to about 2 Tbsp., 8\u201310 minutes.<\/p>\n<h4>Step 3<\/h4>\n<p>Remove lentils from heat and sprinkle <strong>1 Tbsp. toasted sesame seeds<\/strong> over. Serve warm with <strong>cooked rice<\/strong> and <strong>seasoned toasted seaweed snacks<\/strong>.<\/p>\n<p><strong>Do ahead:<\/strong> Lentils can be made 3 days ahead. Cover and chill.
