It starts with store-bought lasagna noodles that\u00a0<em>you don\u2019t even have to boil.<\/em> Important: Don\u2019t make the mistake of buying \u201cno-boil noodles\u201d as these can turn mushy when cooked. The secret to achieving the ideal al dente texture here lies in the quick homemade marinara sauce, made with just enough liquid to cook the noodles through without leaving the baked casserole too watery.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>8\u201312 servings<\/p>\n<div>\n<p>\u00bc<\/p>\n<div>cup extra-virgin olive oil, plus more for pan<\/div>\n<p>5<\/p>\n<div>garlic cloves, finely chopped<\/div>\n<p>1<\/p>\n<div>28-oz. can whole peeled tomatoes<\/div>\n<p>\u00bc<\/p>\n<div>tsp. crushed red pepper flakes<\/div>\n<p>2<\/p>\n<div>tsp. Diamond Crystal or 1 tsp. Morton kosher salt, divided<\/div>\n<p>1<\/p>\n<div>16-oz. package frozen chopped spinach, thawed, drained<\/div>\n<p>1<\/p>\n<div>16-oz. container whole-milk ricotta<\/div>\n<p>4<\/p>\n<div>oz. cream cheese, room temperature<\/div>\n<p>3<\/p>\n<div>oz. Parmesan, finely grated, plus more for serving<\/div>\n<p>1\u00bd<\/p>\n<div>cups heavy cream<\/div>\n<div>Freshly ground pepper<\/div>\n<p>15<\/p>\n<div>dried lasagna noodles (from a 16-oz. box; not no-boil)<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Preheat oven to 375\u00b0. Grease a large 13&#215;9&#8243; baking dish with <strong>extra-virgin olive oil<\/strong>. Heat <strong>\u00bc cup extra-virgin olive oil<\/strong> in a medium saucepan over medium. Add <strong>5 garlic cloves, finely chopped<\/strong>, and cook, stirring, until beginning to brown around edges and fragrant, about 2 minutes. Add <strong>one 28-oz. can whole peeled tomatoes<\/strong> and <strong>\u00bc tsp. crushed red pepper flakes<\/strong> and crush tomatoes with a wooden spoon to form a mostly smooth sauce. (If your tomatoes are on the firmer side, use kitchen shears or a potato masher to break up.) Season with <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong> and cook until mixture is thickened and flavors have come together, 15\u201317 minutes. Transfer to a 4-cup heatproof measuring glass and, stirring constantly, pour in water to make 3 cups sauce.<\/p>\n<h4>Step 2<\/h4>\n<p>Meanwhile, mix <strong>one 16-oz. package frozen chopped spinach, thawed, drained<\/strong>, <strong>one 16-oz. container whole-milk ricotta<\/strong>, <strong>4 oz. cream cheese, room temperature<\/strong>, and <strong>3 oz. Parmesan, finely grated<\/strong>, in a large bowl to combine, then mix in <strong>1\u00bd cups heavy cream<\/strong>. Season with <strong>freshly ground black pepper<\/strong> and add remaining <strong>1 tsp. Diamond Crystal or \u00bd tsp. Morton kosher salt<\/strong>.<\/p>\n<h4>Step 3<\/h4>\n<p>Pour a scant \u00bd cup tomato sauce into prepared baking dish and spread into a thin layer just to coat. Place <strong>3 dried lasagna noodles<\/strong> in a single layer on top. Spread 1 cup spinach mixture over evenly. Pour \u00bd cup sauce on top and spread over evenly. Starting with another layer of noodles, repeat process to create 4 more layers. Sprinkle a thin layer of <strong>finely grated Parmesan<\/strong> on top and cover pan with foil.<\/p>\n<h4>Step 4<\/h4>\n<p>If not making ahead, bake lasagna 45 minutes. Heat broiler. Uncover lasagna and broil until top is golden brown and bubbly, about 4 minutes.<\/p>\n<p><strong>Do ahead:<\/strong> Lasagna can be assembled 3 months ahead; cover tightly and freeze. Bake, covered, in a 375\u00b0 oven 45 minutes. Uncover and bake 10 minutes more.
