This version takes a much lighter tack, wilting fresh, mature spinach into silky tenderness in just seconds, then folding in cr\u00e8me fra\u00eeche for brighter, more balanced richness. Inspired by the writer Julia Langbein\u2019s trips to the greenmarkets of France where she first tasted this phenomenal combination, it is simply silky, creamy spinach heaven. Cr\u00e8me fra\u00eeche is cultured heavy cream that starts out the texture of extra-dense whipped cream but turns fluid when heated; instead you could use heavy cream and a squeeze of lemon for a similar effect.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>4 servings<\/p>\n<div>\n<p>2<\/p>\n<div>Tbsp. extra-virgin olive oil<\/div>\n<p>6<\/p>\n<div>garlic cloves, thinly sliced<\/div>\n<p>2<\/p>\n<div>medium bunches mature spinach, trimmed, or two 5-oz. bags spinach<\/div>\n<div>Kosher salt, freshly ground pepper<\/div>\n<p>\u00bd<\/p>\n<div>cup cr\u00e8me fra\u00eeche<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Heat <strong>2 Tbsp. extra-virgin olive oil<\/strong> in a large skillet over medium. Cook <strong>6 garlic cloves, thinly sliced<\/strong>, stirring occasionally, until golden around edges and very fragrant, about 3 minutes. Increase heat to medium-high and add <strong>2 medium bunches mature spinach, trimmed, or two 5-oz. bags spinach<\/strong>, by the handful, stirring and letting it wilt slightly after each addition. Season with <strong>kosher salt<\/strong> and <strong>freshly ground pepper<\/strong>. Cook spinach, stirring often, until mostly wilted, about 1 minute. Remove from heat.<\/p>\n<h4>Step 2<\/h4>\n<p>Add <strong>\u00bd cup cr\u00e8me fra\u00eeche<\/strong>; stir until spinach is saucy and coated.
