Let chopped raisins (any kind you have on hand will do!) and shallot lightly pickle in vinegar; while that\u2019s sitting, make yourself useful by washing lettuce. Whisk the vinegar mixture with Dijon mustard, honey, and olive oil until thick. Adjust to taste\u2014an extra drizzle of honey to pull out the raisins\u2019 sweetness perhaps, or another splash of the seasoned vinegar for a bit more brightness. When it\u2019s perfect, spoon the vinaigrette over a bowl of greens and, if you\u2019d like, adorn your salad with a shower of toasted nuts.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>Makes about 1 cup<\/p>\n<div>\n<p>1<\/p>\n<div>small shallot, finely chopped<\/div>\n<p>\u00bd<\/p>\n<div>cup raisins (black, red, and\/or golden), finely chopped<\/div>\n<p>\u00bc<\/p>\n<div>cup (or more) white or red wine vinegar<\/div>\n<div>Kosher salt<\/div>\n<p>2<\/p>\n<div>tsp. (or more) honey<\/div>\n<div>Freshly ground pepper<\/div>\n<p>\u2153<\/p>\n<div>cup extra-virgin olive oil<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Stir together <strong>1 small shallot, finely chopped<\/strong>, <strong>\u00bd cup raisins (black, red, and\/or golden), finely chopped<\/strong>, and <strong>\u00bc cup white or red wine vinegar<\/strong> in a medium bowl; season with <strong>kosher salt<\/strong>. Let sit at room temperature 5\u201310 minutes.<\/p>\n<h4>Step 2<\/h4>\n<p>Whisk <strong>2 tsp. Dijon mustard<\/strong> and <strong>1 tsp. honey<\/strong> into shallot mixture to combine; season with <strong>freshly ground pepper<\/strong>.
