Cooking the greens separately and adding them back in at the end ensures they stay vibrant; the simple aromatics and ground spices seasoning the lentil and rice base are bolstered by the verdant addition.<\/p>\n<div>\n<h2>Ingredients<\/h2>\n<p>4 servings<\/p>\n<div>\n<p>1<\/p>\n<div>10-oz. package frozen chopped spinach, thawed<\/div>\n<p>4<\/p>\n<div>Tbsp. unsalted butter, divided<\/div>\n<p>\u00bd<\/p>\n<div>cup finely chopped herbs (such as cilantro, parsley, and\/or dill)<\/div>\n<p>2<\/p>\n<div>tsp. Diamond Crystal or 1\u00bc tsp. Morton kosher salt, plus more<\/div>\n<p>5<\/p>\n<div>Tbsp. extra-virgin olive oil, divided<\/div>\n<p>3<\/p>\n<div>medium onions, thinly sliced<\/div>\n<p>5<\/p>\n<div>garlic cloves, thinly sliced<\/div>\n<p>1<\/p>\n<div>Tbsp. ground coriander<\/div>\n<p>2<\/p>\n<div>tsp. ground cumin<\/div>\n<p>\u00bd<\/p>\n<div>tsp. crushed red pepper flakes<\/div>\n<div>Freshly ground pepper<\/div>\n<p>\u2154<\/p>\n<div>cup basmati rice<\/div>\n<p>\u2154<\/p>\n<div>cup French green lentils<\/div>\n<p>4<\/p>\n<div>cups low-sodium vegetable broth<\/div>\n<div>Juice of 1 lemon<\/div>\n<p>1<\/p>\n<div>cup plain whole-milk yogurt<\/div>\n<\/div>\n<\/div>\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>\n<h4>Step 1<\/h4>\n<p>Wrap <strong>one 10-oz. package frozen chopped spinach, thawed<\/strong>, in a clean kitchen towel and twist and squeeze towel tightly over the sink to expel as much liquid as possible.<\/p>\n<h4>Step 2<\/h4>\n<p>Melt <strong>2 Tbsp. unsalted butter<\/strong> in a medium Dutch oven or other heavy pot over medium-high heat. Add spinach and <strong>\u00bd cup finely chopped herbs (such as cilantro, parsley, and\/or dill)<\/strong> and season with <strong>kosher salt<\/strong>. Cook, stirring occasionally and breaking up spinach, until mixture is combined and spinach and herbs are slightly darkened in color, about 4 minutes. Transfer to a bowl.<\/p>\n<h4>Step 3<\/h4>\n<p>Heat <strong>3 Tbsp. extra-virgin olive oil<\/strong> in same pot over medium-high. Add <strong>3 medium onions, thinly sliced<\/strong>, and season with salt. Cook, stirring occasionally, until lightly browned and frizzled around the edges, 9\u201312 minutes. Add <strong>5 garlic cloves, thinly sliced<\/strong>, and cook, stirring often, until softened and fragrant, about 1 minute. Add <strong>1 Tbsp. ground coriander<\/strong>, <strong>2 tsp. ground cumin<\/strong>, <strong>\u00bd tsp. crushed red pepper flakes<\/strong>, and a <strong>few grinds of<\/strong> <strong>freshly ground black pepper<\/strong>. Cook, stirring often, until combined, about 1 minute.<\/p>\n<h4>Step 4<\/h4>\n<p>Add <strong>\u2154 cup basmati rice<\/strong>, <strong>\u2154 cup French green lentils<\/strong>, <strong>4 cups low-sodium vegetable broth<\/strong>, <strong>2 tsp. Diamond Crystal or 1\u00bc tsp. Morton kosher salt<\/strong>, and 6 cups water; stir to combine. Increase heat to high and bring soup to a boil. Reduce heat so soup is at a simmer and cook until rice is cooked through and lentils are tender (they will still retain a bit of bite), 30\u201335 minutes.<\/p>\n<h4>Step 5<\/h4>\n<p>Stir spinach mixture into soup and cook, stirring often, until combined and heated through, about 3 minutes. Remove pot from heat and add <strong>juice of 1 lemon<\/strong> and remaining <strong>2 Tbsp. unsalted butter<\/strong>; stir until butter is melted. Taste soup and season with salt and black pepper.<\/p>\n<h4>Step 6<\/h4>\n<p>Mix <strong>1 cup plain whole-milk yogurt<\/strong>, a <strong>big pinch of salt<\/strong>, and remaining <strong>2 Tbsp. extra-virgin olive oil<\/strong> in a small bowl to combine.
